For the Chocolate Coating

  • 2 tbsp coconut oil

For the Peanut Butter Filling

  • ½ cup natural peanut butter
  • ¼ cup almond flour
  • 1–2 tbsp maple syrup or honey (optional, for sweetness)
  • ½ tsp vanilla extract
  • Pinch of sea salt

Directions

  1. Melt the chocolate coating: Melt coconut oil, then whisk in Cheerific Chocolate until smooth. Set aside.
  2. Make the peanut butter filling: In a small bowl, stir together peanut butter, almond flour, maple syrup/honey (if using), vanilla, and salt. Mixture should be thick but spreadable—like cookie dough.
  3. Assemble the cups: Line a mini muffin tin with paper liners. Spoon ~1 tsp chocolate mixture into each liner, spreading to coat the bottom.
  4. Add the filling: Scoop ~1 tsp peanut butter mixture, shape into a small disc, and place on top of chocolate base.
